Diamond 49 Maintenance Tips
Understanding that your display case is impacted by the
environment that it works in is an important part of any
maintenance program.
A bakery, for example will have higher levels of flour dust
than, say, a deli restaurant. A restaurant with an open kitchen
will have higher levels of humidity than a food kiosk may
have. A grocery store produce area will have higher levels
of water and misting than a bakery.
In short, the refrigerated, non-refrigerated and heated
displays must be maintained to operate properly on a long-term
basis.
INTERIOR CASE MAINTENANCE
On self-contained refrigerated units the condensing units
must be:
- Kept clear so that they can circulate the air to facilitate
cooling.
- Vacuumed to remove dust and debris build-up from the
fins of the fan.
- Serviced occasionally to ensure proper operation.
Case interiors must be cleaned on a regular basis; REMEMBER
TO SHUT DOWN THE POWER.
- Remove inlays and housing covers.
- Remove debris and miscellaneous items that may have
fallen into the case interior.
- Wash and sanitize the tub, refrigeration coil and case
interior.
- Ensure that the drain pipe is not blocked.
- Check that the fans are clear of any build-up.
Note: Before sealing up the case interior, turn the case
on and confirm that the fans are all operating, then replace
cover and inlays.
EXTERIOR CASE MAINTENANCE
Whether your Arctica display case was ordered with plastic
laminate, hardwood veneer or a solid surface, it must be
maintained in order to remain looking good.
- Glass in a foodservice case should be cleaned using a
mild vinegar and water solution.
- Plastic laminate may be cleaned with standard, non-abrasive
cleaners. Do not use full-strength bleach.
- Hardwood veneers should be cleaned with good quality
furniture cleaning solutions.
- Solid surfaces such as CORIAN® (see
CORIAN® Care and Maintenance), and granite (see
Granite Care and Maintenance) should be cleaned using
solutions specially designed for use on those materials.
